
Shanleigh Powell is a Registered Dietitian with a background in clinical nutrition and a passion for making healthy eating engaging and accessible. Most recently, she worked with a nonprofit organization, leading programs that encouraged students to explore and enjoy nutritious foods through hands-on learning experiences.
Shanleigh earned her bachelor’s degree in nutrition from Abilene Christian University, then completed a combined Dietetic Internship and Master of Public Health at the University of Texas Health Science Center in Houston. It was there that she first discovered the power of teaching kitchens and gardens in nutrition education—an approach she continues to value and incorporate into her work.
She is especially passionate about the role nutrition plays in preventing and managing chronic disease. In her free time, you’ll find Shanleigh trying out new recipes and finding fun, flavorful ways to make healthy food something to look forward to.
